About Geronimo Restaurant
Chef Rios’ passion for food has taken him around the world in pursuit of culinary innovation and creativity. He has termed his approach to food as “contemporary global cuisine,” with an emphasis on fresh produce, Southwestern and Asian influences, and French technique. His menu takes advantage of an abundance of locally grown fruits and vegetables, as well as organic meats and poultry, to create an exciting menu that honors the culinary legacies of the Southwest. Chef Rios stays on the cutting edge through culinary research and experiments, which keeps his cooking fresh and inventive. Chef Rios received his formal training at the Culinary Institute of America and supplemented that with class work in pastry at Ewald Notter’s school in Chicago.
Rios was named Chef of the Year by the City of Santa Fe, and twice, most recently in 2007, by both the State of New Mexico, and by the New Mexico Lodging Association. In 2008, Chef Rios appeared as a competitor on Food TV’s “Iron Chef America” taking on Iron Chef Bobby Flay. In April, Rios formed a partnership with Chris Harvey and Mary Hasted to take over the historic and award-winning Geronimo restaurant.
